My son brought me back from Marrakesh a very basic and simple red clay tagine (but all the more beautiful in its simplicity). I have kept it in water and then seasoned it with oil, re-baked it in the oven to strengthen it, but I have never tried cooking in it!

As my oven has now packed up and I am not planning to have it repaired for a while (it costs at least £90 to replace the part I need), could I try to use the tagine on the gas burner?

Also, has anyone got a nice vegetarian recipe that I can try?

    Thank you all!

well you have done the right thing seasoning it though this things are prone to cracking and breaking see https://www.lakeland.co.uk request a catalogue by snail mail post normally get a £5.00 discount voucher they are open 24hrs a day work only on stove if they are not Halogen and even then advisable to purchase a heat diffuser from Lakeland,
A Tagine cost £16.00 plus apparently a casserole dish is jush as good start with the
    low heat setting.

I bought a clay one from Morrocco. The secret is to use a heat diffuser if you want to gook on a gas hob. I didn't first time and ended up with a burnt bits at the bottom the shape of the gas hob.:o

I use a griddle as a diffuser. The type that goes across your hob. Works a treat and you can pick them up cheap.

In the summer you could stick it on the BBQ.

    Hi all,
We've been given an earthenware tagine but not quite sure how to use it.
We have an electric oven - would it go on the ceramic hob or inside the oven?
Is it a case of bunging in all the ingredients and cooking slowly like a slow cooker?
Any advice and/or tried and tested recipes would be welcome :D

  • Have people round for dinner later this week and was thinking of making a tagine. Does anyone have a good tried and test reasonably easy recipe for this. What would you serve it with (don't like cous cous) ? Any ideas for a starter and main that would work well with it.
    Thanks

  • I serve couscous with mine. I cook the it in stock rather than plain water.

I have a tagine recipe but its rather involved :(, slow cooks well though. Ask if you're interested - I know you wanted something easy.

  • would use diced carrots, diced swede, chopped onions, tinned chick peas, chicken stock, tomato puree, paprika, chilli powder, chicken thighs... served with couscous made up with some of the cooking juices....
  • would maybe do some kind of citrussy salad as the starter.... perhaps with a little feta or something....
