Getting letter to confirm delayed flight

Hi,
My travel insurance want a letter from the airline stating that my flight was delayed. I flew Norweigan Airlines from Orlando to Copenhagen. This flight was 3 hours late, resulting in us missing our connection home. I've tried ringing but can't get through to anyone.
Can anyone advice on the best way to get a such a letter?
