Hi all,
Every couple of weeks I get a vegetable box from the market man, the problem is although I use up all the veg I can't use up all the potatoes as a result I seem to have an entire cupboard full of potatoes.
Only me to feed and am bored of the usual boil, roast and mash options so What can I do with them?

Look up recipes for potato dumplings, potato as a base for pasta / gnocchi (I personally don't like these, but have seen recipes)
I do like potato as gratin dauphinoise or savoyard, with a meal, or adding cheese & bits of bacon / ham to the recipe, it makes a main course.
I also like casseroles with potatoes included, such as some lamb & potato hotpots; and every spring & early summer I make this wonderful chicken recipe:
put sprigs of rosemary in the chicken, squeeze a lemon over it and put the halves in the cavity as well, plenty of salt & pepper; put in a deep dish with lots of garlic cloves and small new potatoes; cover & slow roast (I put in a hot oven, turn down to about 140 and roast for about 3 hours, but keep an eye on it). I think it may be worth trying at any time of year, just cutting the potatoes into chunks - but it is so beautiful & cheering in spring!
layer slices of potato in any lasagne / moussaka type recipe - make up your own
I make potato salad the Jane Grigson way: put some olive oil( I actually use rape seed oil) and spring onions or chives + a little white wine vinegar in a bowl, tip in the warm potatoes and turn them over to absorb the oil & vinegar. I serve this with mayonnaise on the side. You can make a meal by adding chunks of cheese (goats or feta especially good) and chunks of bacon.
Classic Salad nicoise uses potatoes and I make them this way.
And this time of year I look forward to the good old MSE jacket potatoes!0 -
I hate spuds mashed or boiled so for me it's
Fadge ( potato bread or scone depending where you are from ) Delish straight from the pan smothered in butter, even nicer with an egg and crispy bacon
Gnocchi - just love this with just olive oil and Parmesan
Duchesse potatoes, cook and freeze for when you need them
Fondant potatoes, lovely with plain grilled meat
Croquette - add ham and onion and make them the main of your meal
You can even use mash as the pastry casing of pies0 -

Also try:
Dauphinoise potatoes (sliced potatoes with cream, very rich)
Savoyard potatoes (sliced potatoes with stock instead of cream)
Home-made wedges - quarter smallish potatoes, toss in 1-2 tablespoons of olive oil, crack of black pepper, maybe some herbs (I sometimes sprinkle hot paprika on) turn into a roating pan & cook for 30 - 40 minutes depending on size, turning once.0 -
Ask the market man not to include any while you use them up, then ask for the appropriate quantity to be included in the box.0

We have gratin all the time, we love it! Best thing to do with potatoes.
Potatoes thicken a whole host of soups and soup freezes brilliantly so you could do some bulk cooking for winter lunches.0 -

I have several cookery books just on potatoes.
You could Google for recipes or maybe look for a book in your local library or charity shops.0 -
