Trying to be smart with a hug bag of potatoes I have ended up out of my depth!!
I have loads of mashed potato left over and was wondering what I could use it for over the next few days? I have made 4 individual shepherds pies for the freezer already and have pie and mash and sausage and mash for dinners but still have enough for meals all week!! I'd rather not freeze it as I have frozen chips and roast potatoes i have made already and don't have a lot of room left in there now.
I was trying to use up some potatoes that had got cheap but needed to be used asap but must have underestimated how much mash I had made!

You may not have much space in your freezer but I'd still put the remainder of the mash into small bags and squeeze it into any remaining nook and cranny in your freezer whilst it's not frozen it should squeeze in to a lot of corners.:footie:Regular savers earn 6% interest (HSBC, First Direct, M&S)

I just made a cheese/potato pie with mine. Ate it for tea and it'll be tea again tomorrow night, with beans each night.

My fave recipe....
Boil a savoy cabbage (and any leftover carrot) - mix it in with the mash.
Heat large baking tray in oven with oil...chop some onion and let it frizzle.
Add mash/cabbage to baking tray.
If you must have meat, lay some smoky bacon rashers on top from 10 mins in.
10 mins later, make 4 nests with a ladle - crack an egg into each dent, sprinkle with grated cheddar.
Serve as eggs are just done.

Personally I don't add an egg, because the gnocchi come softer, but it is easier if you do as they are more compact and don't break when cooking.Finally I'm an OAP and can travel free (in London at least!).0 -
Granny used to fry mashed potatos next day and have them with vinegar. They go a bit crispy and brown in places. Sounds strange but was absolutely delicious!0
