If you're in Belfast on a Saturday St Georges farmer's market can be a nice place to spend lunch. you may have already seen the tourust board site but if not:
www.gotobelfast.com. Plenty of info there. There is often useful info listed in the inflight mags..take a look at www.easyjetinflight.com. Not sure of the others but check their websites.
Your itinery will also depend on whether you're over for a weekend or midweek. Things are still quite on Sundays,Timmay!0
