Nutritionally good meals for the Freezer?

    What sort of pasta dishes are we talking here MATH? I think I might be tempted to freeze something like lasagne or cannelloni to save time but for general pasta/sauce dishes surely it's quicker to cook fresh pasta from scratch than to defrost/reheat it, not to mention tastier :confused:

    Yeah, maybe 'pasta bake' leftovers are another exception

    I freeze cheese and potato pies.
    I always make lots especially if i have loads of spuds that are past there best.
    i add fried onions, cheese and tomatoes for the top.
    I always defrost overnight and then bake them in the oven for about half an hour.
    They are really yummy :D

    i generally always have sheperds pie and chilli in my freezer as i tend to find them easier to cook more but thanks for some fab ideas on here everyone......going to have a cook soon i think and make some casseroles and stews for when dh is on funny shifts as i dont tend to eat proper meals then.

    Yes, with cannelloni/lasagne I would follow the rules of cooling and wetting the pasta and using a runnier sauce.

    If I were honest I would have to agree with you that general pasta dishes are best fresh and that batch freezing saves you very little time.

    If I were totally honest I would have to admit that the last time I filled a canneloni shell was more than 10 yrs ago. Well if life too short to stuff a mushroom it certainly is too short for that kind of counter top messing caper.

    If I were brutally honest I would have to admit to buying my lasagne from Tesco:eek: cos at that price I can't be faddled to skin the tomatoes.:o

    On the subject of freezing food, is it okay to freeze soup? Have never frozen own cooked meals before. Love the tips so far...

    Yup, soup freezes really well, although I've not yet tried any with cream in them as I'm not sure if that might separate on defrosting/reheating. I usually fill a freezer bag with a single portion then place it in a plastic tub to freeze, so it gives it some shape, then remove the tub and stack the soups in one of the drawers :)

    I froze some cream of spinach soup and that was fine. Of course I'd used double cream and made it quite thick, so it needed to be watered down once thawed. I'm not sure how it would be if I had frozen thin soup.
