    Hi njc12,

We have an older thread on cooking for the freezer that might give you some inspiration, so I'll merge your thread with it to keep all the suggestions together. The posts are listed in date order so you'll need to read from the beginning to see all the replies.

  • Beef and kidney stewed in gravy is handy to have in the freezer because it is so versatile. It's great for a treat with chips when you really wish you could have a sirloin steak and also good with new potatoes. mash or in a pie
  • There are some great tips on here but I have one small problem - I don't eat red meat! Anything with mince is out for me and I really don't like turkey mince or vegetarian mince - any ideas anyone?

Parking pot: £1.00 (everytime I walk into town instead of parking on pay and display, I put the money saved in a jar)

    I freeze the following:

soup, esp butternut squash (just because i love it)
bolognese so we can add it to jacket pots or on top of pasta (wouldn't freeze pasta though)
    chilli con carne
    beef casserole
    chicken caserole
sausage caserole (you get the picture)
    veg hotpot
    beef pie, with puff pastry
    chicken pie, with puff pastry
    home made burgers
lasagne, just make sure the sauce is quite runny
    stews bulked with bulgar wheat
    curries
    tomato sauce and pasta sauces

i think thats it... also freeze pudding type stuff

I portion into bags and freeze that way, though putting the bags into containers so they freeze in a set shape is a good idea.

slow cookers are fab, mine is used for most of the above! also for making stock after a roast chicken.

A general rule of thumb is if Birds Eye/Findus/Iceland make it and freeze it then you can too

That's not strictly true as the commercial companies can freeze their products much faster than a domestic freezer. I was told this by a chef friend. It's probably worth giving a portion of anything reasonable a try though, maybe it'll work OK! ;)

I'm just seeing on here that some of you freeze puff pastry on top of pies--do you think it would keep ok in the fridge for a day or so without going soggy? I want to leave dinner in the fridge for my friend since she has let us stay in her house while she was away and I'm really struggling for ideas.

Ideally I'd like something low fat, low carb but still quite "comforting" as she's been visiting family for almost three weeks. Normally, she is working really hard to eat healthily but I know it is always a struggle when you travel, and particularly going back to her home country where everyone wants to spoil her with foods she misses (but that often get quite heavy after a few weeks)! so wanted to welcome her home with something that would be nice, but not feel like an extension of the over-indulgence.

I know puff pastry isn't great for low carb-low fat dieters, but I was thinking my chicken and veg pie--I could do it deep dish so the portions of pastry would be small?

Any other ideas welcome. I was also thinking a spinach and ricotta lasagna, but again it is high in fat and carbs. Clearly I'm not very good at this:rotfl:

Whatever it is, I was just going to make a double batch the night before we leave and put one batch in the fridge so they could heat it up. I was hoping for something to go in the oven and they will likely be jetlagged and needing to get ready for work next week so if she could get on with laundry or whatever while it heats up that would be nice:o

Yes, I know. I overthink everything. Just want to do something nice for her.
