Hello - been ages since i was last on here.
I thought i'd tell you what idea I can up with this weekend (no doubt lots of you already do this!). Anyway, I am determined to keep on top of food finances as they have been slipping again recently - partly because it gets half way through the week and I'm tired and lacking in inspiration!
So when I was shopping this weekend I bought quite a few chicken breasts. I then decided to chop them up and put them into freezer bag portions. But I also added marinate to the bag at the same time - so now all i have to do is remember to pull out a bag in the morning and all i have to do is pop it in the oven when i get home and cook some rice/pasta/potaotes to go with it.
however - I've run out of marinate ideas! especially ones that can freeze.
so far we have had curry pastemixed with natural yoghurt (that one wasn't frozen) and lemon juice
lemon, thyme and olive oil
chillies and lemons
harissa paste (quite expensive so used sparingly!) and lemon juice
can anyone suggest anything else that would work well?

sun-dried tomato paste and olive oil

That is a clever idea!
A quick and easy one I make if I'm cooking chicken breast is a splash of white wine, a dash of olive oil, chopped onion, garlic and black pepper. If you want it a little bit spicier add some mustard or chilli powder. It makes the chicken much more moist when you come to cook it.
