I can't understand why you wanted a raw burger and then complained when you got one.

With Steak Tartare you also get a raw egg in the middle. It's something i've wanted to try although I can imagine that it would be quite an interesting morning after eating that. I've had a few steaks that were "blue". The problem is that they don't shrink down with cooking so they're pretty huge and a bit chewy so they start off sort of warm and by the time you've chewed your way through half of it, the rest is cold.
In Europe they do things much better. I remember in Prague i ordered a steak "rare". On the outside it was cooked and the indisde was wonderful, nice and pink. The plate was covered in blood afterwards. We just don't do it right in this country.0
