Vent & praise - raw burger

You can eat raw beef. I've seen steak tartare in some restaurants in France. Some people say you shouldn't though what with BSE and such.Come on you Irons0

You can eat raw beef. I've seen steak tartare in some restaurants in France.
Raw beef is fine so long as it's fresh and has been stored correctly.
The problem with an undercooked mass produced burger is that you generally have no idea of whether or not it had been frozen and fully defrosted or what conditions it was stored in before it finally got to the customer.
These points wouldn't generally be a problem providing that the meat was cooked to a high enough temperature to kill any beasties that had formed on the patty before it went onto the grill.
Whenever I make my own burgers, they are never overcooked and are still pinkish in the middle but I know exactly where the meat came from and how it had been stored and handled.0 -

You shouldn't really have burgers pink in the middle. It can cause the spread of ecoli. Steaks are ok pink as the bacteria is on the outside of the steak and is killed when you fry or grill the steak. With mince as its all mixed up the bacteria that is on the outside can be on the mince that is in the middle of the burger. Therefore not cooking the burger through can give you food poisoning.
Even if it was safe like you say I wouldn't trust a raw mass produced burger from McDonald's.0 -
The ones I cook are never bright pink in the middle, just having what I would refer to as a pinkish tinge and the meat I use is always very fresh and is minced by me shortly before making the burgers.
I know that serving them like this isn't the ideal way but after spending close to 30 years living and working in some pretty rough places around the world, I seem to have built up a reasonable tolerance to food related bugs.
Even though the bacteria will normally be on the outside, providing a well stored good quality piece of fresh meat is used, mincing or grinding it shouldn't be a problem as the bacteria will be minimal. (after all, steak tartare is made using freshly chopped or minced steak and this doesn't cause too many problems).0 -

After a Mr Bean episode I watched over 25 years ago it's something I've never fancied eating.
I've never looked at mince in a supermarket and thought "I bet that will be nice raw"0 -
