I need to move from Three as they have capped tethering to 4Gb.

Looks like a choice between o2 and Vodaphone for uncapped tethering and wi-fi.

Which one has the best coverage in rural areas (mainly Cumbria/The Lakes) and highest number of wi-fi hotspot locations?

Now retired I'm almost permanently on caravan sites. Didn't really think I was such a high data user but the main culprits are updates for maps (Garmin 7Gb), Macbook, iphone and apps so maybe I need to go in to town and update them on wi-fi in future.

I also need a new iPhone but SIM only seems cheapest though data is reduced from 20Gb to 10Gb. Don't need to pay for it unlocking later? Could go either way on that one.

Just another thought, should I be considering keeping the Three SIM and buying a separate data dongle for the Macbook, any advantages there?

No one does unlimited data any longer. All services have a cap or point where they are throttled or restricted.
