I suspect shop bought Scotch Eggs have the meat shaped into a sphere by a machine which doesn't rely on there being an egg present, which explains why there is a gap between the egg and meat. This would also explain how they make the smaller snack eggs, with chopped egg inside0

Interesting possibility. I'd always assumed it was the cooking process that caused the gap. It's often quite noticeable. I think your explanation sounds more likely.0
