INTEREST and EXCHANGE RATES

Hi everyone - I,m sure someone on here will be able to clarify this.
I started court proceedings recently on a delay back in March 2009 - had been fobbed off for years prior to this.
I put the claim in as a not specified amount, asking the courts discretion on applying interest to the 600 euro I was due if court held in my favour. I was also planning to question the euro exchange rate applicable.
I had the court letter back to inform me the airline was defending, and had the usual 14 days to present their defence. Subsequently I have received a copy email from the airline that they have sent to court, to say they are not defending, offering me £432 (recent ex rate ) but refuting and defending my right to any interest on that sum.
My view is that interest may be due from the "delay event" ie March 2009. Also, that the exchange rate applicable should possibly be at the time of the delay event
So, the questions to those on here who will know -
1 - Where to go from here ? are there any precedents as to when exchange rates are set ? in march 2009, it would have been £520 ish at the time of the delay.
2 - again, are people winning interest on their claimed amounts, and dating how far back ?
I need to decide quite soon whether to proceed with these issues with the court, or just accept the offer.
Any information to clarify these issues gratefully received.

Recent court cases have been calculating exchange at the date of the court case. I think you are entitled to interest of 8%(according to the small claims court website). Why don't you show the company the website page here: https://www.gov.uk/make-court-claim-for-money/work-out-interest and offer to split the difference at 4%.0
