When they start to go brown and really soft, which I don't really like.

I think crumble might be a bit odd--although many people make 'baked bananas' so might be worth a shot of blending that recipe with a crumble topping!0 -

If we have over ripe bananas but no time / inclination to make a cake there and then we simply pop them in the freezer.0 -
I was sceptical about banana icecream, but it really does work and is a good way to use up brown bananas.
Just mash up a couple and add a couple of tablespoons of milk; raisins are nice too. Then just put in a tub and freeze.

i was going to suggest freezsing them for banana ice cream.
I didnt believe i would like it but its lush and you can hardly taste the banana.i blend it in my mini chopper, its lovely with added coconut milk, mango etcYou're not your * could have not of * Debt not dept *0 -

I freeze bananas that are going past it whole, with the intention of doing something with them, but never get past eating them whole in their frozen state, they are lovely.0

Banana custard with layers of jam swiss roll, that's still one of my favourite desserts as an adult
