  • Squeaky - off topic (sorry) but does potato water work in pizza base dough (you've got me wondering what else I can use it for - up till now I've only put it into stock and the occasional stew).

    When you boil your potatoes for tea... don't drain the water you cooked them in down the sink - keep it.

    I use the cut off bottoms of those 2 ltr milk containers and fill as many as will go with the right amount of liquid for my standard loaf recipe. I'll put one in the fridge for my next loaf and freeze the others.

    Using this water to make bread with gives you a very nice light loaf.

    I've never needed vitamin C tablets to help a loaf to rise since I started doing this.

    Honest :)

    In fact - if you have an odd potato left over - you can mash it and add it to the bread mix.


    Note: Never having had much luck getting the balance of water to rice right and not burning the bottom of the pan in my early days - I got into the habit of using loads of water and cooking it at a boil just strong enough to lift the rice and keep it moving in the pan. This water too makes great bread :)
