Need ideas for an awesome new year trip

DH has a significant birthday at new year. Had always planned to take him to the Great Barrier Reef but he'd rather wait a while for that as we now have a small child.
So, looking for ideas for a 5-7-10 night holiday to somewhere fabulous for new year and a few days either side. Don't want to do New York, Las Vegas or UAE. Would like somewhere warmer than the UK ideally. We aren't really "slob out on a beach" type people, so somewhere with stuff to do as well as opportunities to chill out. DD will be 5 but is an experienced traveller.
Any ideas?

I thought I was quite easy going. We've done Kruger twice - need DD to be older before going back.
Don't do boats so cruising is out.

South America? Most parts except the far south will be warm/hot at that time. Maybe a bit too far for a one week break though.Let's settle this like gentlemen: armed with heavy sticks

or a multi destination holiday?
South America as been suggested is a good choice, Brazil, Rio, Galapogos Islands, Costa Rica, Argentina etc. personally I wouldn't fly long haul for just 10 days, I once did it to the Caribbean, 7 days, doable, but not worth it!0 -

Many moons ago we took DD + 7yr old GS to Disney in LA for week before NY + NYE
Not exactly sunbathing weather but there was fun for the GS and DD.
We did take off for a few days to do some West coast exploirng
Remember going to Sea World and being very cold watching the whales!
NYE show was good.
10hr flight though.
Spent NYday in

Saudi Warm but no beer!
