This was the return flight. We found from Customer Services at the airport that we had been booked on a flight 3 days later.We eventually left 17 hours late but Sovereign did provide a meal and overnight accommodation. Nevertheless we were not notified of the cancellation and change of booking. Sovereign still claim that Monarch sent notification to an invalid email address.

IMO you have a claim against Sovereign, under the Montreal Convention, for the 'damages' you incurred due to the 17 hour delay.
You need to do a lot of reading to see what parts of this apply to you, and how to quantify said 'damages'.
Sovereign have a case against Monarch, which is entirely separate to your case.

What I don't really understand is how things evolved, for you to turn up at the airport, with either tickets/boarding passes/both, for a flight that had already been cancelled 8 months earlier. What had Monarch offered Sovereign as an alternative to your initial, now cancelled, flight? (Even though Sovereign wern't aware of what this alternative offer was)

But I'll agree that there doesn't seem to be any chance of a EU261 claim here. You wasn't booked on a flight that was cancelled/delayed at short notice. But the level of compensation as cited in the Statute could be a good basis for a MC claim.
