February 2015 'Take your Lunch to Work' Challenge.

Hi All,
This sounds like an excellent challenge. Can I join with a target of 15 please?

Tomorrow I have chicken and tomato pasta, it's all ready in my lunchbox in the fridge so I have no excuse not to take it. The same meal at Uni would cost me £2.50 and I've worked out it cost me 49p as the chicken was a whoppsie. Hmmm there's logic to this take food to Uni lark lol

If you add up what you usually spend on drinks,snacks and lunches for even just a week,it's a real shock to the system.I don't know if there's a 'general' or standard mark up,but,whatever you buy over the counter must be at least double what it 'd be prepared at home.
Packed lunches do need a fair bit of forward planning,and yes,you might end up eating the same thing for a few days,but that's no hardship,is it?
I usually make a big pot of something for the week,which is lunch for the next 5-7 days.This time it's a pot of tomato veggie bolognese sauce and I'll have it with pasta or potatoes with some pesto stirred in.

I don't work on Sundays so my first lunch was an eat at home. I had baked potato with cheese and coleslaw which I already had in the fridge. Tomorrow at work will be the same and I will take a bottle of diluted juice with me so I won't be tempted by cola.:) So that is day1/24 for me. Quick question does anyone know if you can freeze coleslaw ?

Ha ha! My 5 looks so silly! I've taken so much holiday this month but the challenge will ease me in for getting into good habits next month. I live out in the sticks so lunch is always eaten at home I plan to treat my boys to lunch out once in half term.

Purposely added some things I will actually want to eat onto this week's shopping list. Feta cheese and olives, veggie crisps.

Great to see the ideas for lunches.


Today I am at home doing admin for work- so I'll be making a soup.


I have loads of veg, can anyone suggest something to go with parsnips in a soup?
I have leek, swet potatoes, peppers, carrots, tomatoes, celery, kale, and lots more!

this is my favourite parsnip soup recipe


1 onion
1 garlic clove
1 tsp ginger
1 carrot
1/2 stick celery
1/4 tsp dried herbs
3 parsnips
500ml stock
salt & pepper
ground nutmeg
crème fraiche (optional)


I use it as a guide and don't follow it strictly

I have pesto and usually only put in pasta I never thought of having it with potatoes, I have a jar of the kale pesto (from a girlcalledjack) website so I'm going to use that. I just sat with some friends and they both had pasta with a coffee (which I have a flask of) and it came to £5.90 :eek: so my meal is really cheap and I have filter coffee with me. I'm going to put my savings into a sealed pot and see how much I have at the end of term I'm thinking a few treat days over the 6 weeks holidays will be bought.
