Today for lunch i am going to have leftover Meixcan Quinoa Bowl.
Tomorrow i will have some soup.
I have sweet potatoes and butternut squash. Can someone share a nice soup recipe if they have one?0 -
Ok so today I wasn't working and went out for lunch but I got it paid for me so does this count

Hi WantToBeSE if you roast the squash with a little olive oil the sweet potato and an onion quartered then put them in a pan with vegetable stock, mixed herbs and a tin of butter beans if you have them. Simmer for a few minutes and then whizz in the food processor. Add more stock if necessary then add seasoning and serve. HTH

Nigella leaves the skin on the squash and takes it off after roasting. I love the flavour of them but hate peeling and chopping them when raw.
I'm going to try adding butter beans next time.0 -
