    Ok so today I wasn't working and went out for lunch but I got it paid for me so does this count :D???
    Hi WantToBeSE if you roast the squash with a little olive oil the sweet potato and an onion quartered then put them in a pan with vegetable stock, mixed herbs and a tin of butter beans if you have them. Simmer for a few minutes and then whizz in the food processor. Add more stock if necessary then add seasoning and serve. HTH :):)

    Nigella leaves the skin on the squash and takes it off after roasting. I love the flavour of them but hate peeling and chopping them when raw.

    I'm going to try adding butter beans next time.

    Today was #19 for me. Cheese and pickle sandwich. Tomorrow will be ciabatta roll ,hoummos and salad :):)
