How do you send an SMS text on iPhone 4s?

It only seems to want to send imessage through an internet connection but I do not want to use mobile data when I have unlimited texts bundle with VM.

There is a little more to it than just turning off iMessage.
The iMessage facility automatically checks to see if the recipient of the message has an iThingy and will send the message encrypted via data if it can. This allows you to send images for "free" (as opposed to the expensive MMS route) and to send messages to foreign iPhone mobiles for free. Also, your mobile phone provider is not able to record who you send iMessages to, or to save their contents.
iMessages appear with a blue background and SMS a green one, so you can see if the other person has the facility or not. You also receive an instant "delivered" message for the iMessages and it's also free.
An iPhone will send ordinary SMS messages to non iPhone users automatically too. It will also ask if you want to send an iMessage as an SMS if it fails to deliver the iMessage.
I use my iPhone to send pictures to a friend in Australia and the speed is almost instant. It's more convenient in many cases than using e-mail too.
Having a smart phone and turning off the "smart features" defeats the point of a smart phone... As does not having enough data to cope with it's use.0 -

There isn't in the context of the OPs question.
They don't want to use iMessage, not everyone does. If you don't want iMessages you turn them off, it really is that simple.====0
