    but if you have an iPhone then you are stuck as you have to go through your leaving provider to have it unlocked, as unlocking from any other source will fail as soon as you upgrade iOS it will reset the phone back to original provider

    Not quite correct. A proper 'grey' unlocking is available on ebay, although it costs considerably more than 'white' unlocking through EE.

    Apple say even them from ebay will fail on an upgrade, as when unlocked an iphone the provider has to get an official code from apple

    Firstly, iPhones get unlocked by changing records in Apple database, without any 'codes'. So, Apple simply couldn't have said anything about an 'official code'.
    Secondly, how can Apple know?

    'Grey' unlocking is done by the same EE employees that do 'white' unlocking and have access to Apple database.

    well again should i believe staff at an apple store or should i believe a nobody on public forum.
    it seems anyone on the MSE forum think they are the law and know more than companies themselves.

    Well, if "staff at an apple store" really told you about some "official code", then you definitely can't believe them.

    It's a common knowledge that iPhones get unlocked remotely without any codes. Just google or search this board.
