Nargle' s narglicious gluten-free fruit cake......
Soak dried fruit in alcohol for at least a couple of hours, overnight is better.
Mix together softened butter, sugar, (about 125 gms of each), 3 eggs, mixed spice, about 150 gms GF SR flour, about a teaspoon baking powder. Beat the hell out of the mix then fold in the dried fruit with its liquid and a dash of fruit juice so it is all nice and sloppy. Put in lined cake tin, bake at 160-170 degrees for around 40 minutes or thereaboutish. Take out of oven and leave in tin till nearly cold. Yes, that's right. Leave it alone, keep your mitts off it. If you try to remove it from the tin while still warm it will fall to bits on you. When cold eat as is or with custard.
