Flight Cancellation Compensation and Reimbursement

Hi,
On the 10/10/14 I was scheduled to depart from Gatwick Airport for Venice. Unfortunately my flight was cancelled, with the official reason being due to thunderstorms. Originally it had been delayed by about 2 or 3 hours due to the need for a change in aircraft.
However, we overheard from the easyJet representative speaking to a member of Gatwick Airport staff and he said that it was actually due to the flight being overbooked. The fact that no other flight was affected, that there were no actual thunderstorms at the airport, and that our flight the following took off in the middle of an actual thunderstorm makes it all seem very suspicious.
I've tried to ask for compensation to easyJet, but obviously they've said no because it was due to "thunderstorms", however, I'm pretty certain they are just using that to cover themselves.
Someone from customer services told me via email that other flights arriving to Gatwick at a similar time were redirected to London Southend and London Luton, however, I've just checked the flight numbers on flightstats.co.uk, and none of those flights say they were diverted. Admittedly a couple were cancelled, but none said redirected. Also, one of the flight numbers she gave me was my own flight which clearly wasn't redirected to an alternative airport!!
Also, a woman at the customer services desk that evening told us we WOULD receive £300 in compensation each.
Finally, the flight we took the following day went to Verona, and we got trains from there to Venice. Am I entitled to having those train fares reimbursed?

I think someone is pulling your leg here, airlines do not cancel flights due to overbooking - they may deny boarding and have to pay compensation to a limited number of passengers but to cancel a whole flight due to a few overbooked seats would not happen
You mention there was "no other flight affected" is clearly incorrect
between 5pm and 8pm scheduled departures there are 68 that have their actual departure times listed
of the 68 flights
10 flights departed near enough on schedule
17 flights delayed under an hour
24 delayed between 1 and 2 hours
8 delayed between 2 and 3 hours
3 delayed between 3 and 4 hours
2 delayed between 4 and 5 hours
1 delayed between 5 and 6 hours
3 cancelled
If there was not weather issues, what caused the delay or cancellation of 85% of the flights during that time period?0
