Packet sage and onion stuffing - do you have any original ideas for it?

I'm just re-discovering (in the run-up to Christmas, surprise, surprise) the many uses of sage and onion stuffing.

When bought from Mr Tesco's value range it is gobsmackingly cheap, almost given away.

I've always liked it and wondered why it only seems to be used for roast dinner accompaniment. In my time I've made it into rissoles, pretend pate and combined it with various meats, veg and leftovers in my blender to make sandwich fillers.

Does anyone out there have any recipes which they could share and which I haven't thought of?

  • There's a lovely chippy in Pathhead where they made a special of using it instead of breadcrumbs on fried fish - delicious but very filling!

    One of my daughter's favourites is stuffed roast onions: Peel onions (one per person if an accompaniment is usually enough). Cut the top off, and any root bits, but leaving the base whole. Gently simmer whole peeled onions in enough milk (or milk/water mix) to cover until very soft. Drain (milk is great for sauces etc. by the way) and when cool enough to handle very carefully scoop out the insides of each onion, trying not to poke through the bottom of the onion. Chop the scooped-out pieces and mix with the stuffing. Put mixture into the onions. They can then be roasted with a bit of butter/oil on, or with bacon/veggie alternative wound round the onion and secured with a stick of rosemary or cocktail stick. They freeze really well before roasting so are very useful as a veggie Christmas dish with a bit of tarting up of the stuffing.

  • Good way to steeetch out a piece of pork fillet.First give a good walloping with the meat tenderiser (wooden mallet in my house ) then cut into pieces (depending on the size you need ) mines usually about the size of a medium steak.Roll in seasoned flour ,dip in egg then coat in dry sage & onion stuffing mix.Cook with a few roast spuds in the oven ,add veg of choice ,makes a really nice mid week roast.Very filling with some onion gravy over the top.My late OH loved this as iit was so savoury.I also used to make 'scotch eggs' using sage and onion stuffing to coat with instead of bread crumbs.cook in the oven and delicious hot or sliced up cold with salad

    I use it to make the filling for veggie sausage rolls. Mix up a packet & let it go cold, then add in as much extra mature cheddar as you can.

    I use a couple of tablespoons made up to stuff a couple of chicken breasts. Then wrap them up in bacon. Bake in a medium oven (along with some baked potatoes) Stick a slice of cheese on top when chicken is cooked and bung back in oven to melt. I use a cheapo meat thermometer but make sure breasts are cooked through.

    I used to use cream cheese to stuff them but I found it oused out

    ive used it to coat pork chops as well yummy.

  • wow have never thought of using it as anything other than stuffing at xmas but am going to use it now for a veritable feast of veggie delights- cheap and filling

    Veggie sausage rolls.
    Buys some veggie sausages (Linda McC are best IMO) slice lengthways. Make up S&O as usual and put a 'coating' of this over the sausages and put in puff pastry.
    Or a variation, mash up the sausages and mix with some S&O to taste (you may need to add a bit of water or beaten egg for moisture) and put in puff pastry.

    Also good to coat cod fillets and bake.

    Add in mini-balls to veggie tray bake.

    Add enough to flavour dumpling mix, with a nice casserole or veggie stew.
