    OOh snap!

    I posted this a few weeks ago, and was pointed to some nice recipes, but none of them were "the one". I made coconut macaroons last night and tried to make Rice Crispie squares, but it ended up like nutty brittle, so am planning on trying with the rest of the condensed milk to make them with a caramel similar to the one in Millionnaires Shortbread, I'll let you know how it goes.

    This will be my 3rd or 4th attempt!;)

    Thanks for that! Unfortunately, I'm looking for the caramel ones. We are veggie, and don't eat marshmallows. Well, I make HM ones, but that's just too much work , and they're too tasty to waste by using them for something else!

    Right, this is what I did;

    half a tin of condensed milk
    3 tablespoons of golden syrup
    about 50g of butter(I used FLora Buttery as that's all we had)
    1/4 teaspoon vanilla essence

    Boiled it to within an inch of it's life til it was a rich golden caramel colour, and quite fudgelike, then poured in enough Rice Crispies til they were all evenly covered and it was quite stodgy. Put in a dish and into fridge.

    They are delicious....taste quite fudgy (is that a word) and nomnomnomnomnomnomnomnom...

    Will try again later in the week with a basic Golden Syrup/Toffee mix without the Condensed Milk and see if it's anymore like the Caramel Krispie Squares.

    Quite enjoying the experimenting.

    The ones I do since making them in my first Domestic Science lesson in 1972 :eek:is equal amounts of butter, marshmallows and toffees all melted together in a pan until it's a uniform caramel colour and smooth consistency. Then stir in rice crispies pour into a tin and put in the fridge until it's set.

    Being a Yank expat, I love making these! I just don't "get" the whole chocolate ones made here. I think the rice crispies treats are much better, much less rich than the chocolatey ones, but it might just be cultural bias on my part ;)

    This is the recipe from the US Kellogg Rice Crispies site:

    Preparation Time: 10 minutes
    Total Time: 30 minutes
    Servings: 12
    Ingredients

    3 tablespoons butter or margarine
    1 package (10 oz./285g, about 40) regular marshmallows
    - or -
    4 cups / 946ml miniature marshmallows
    6 cups / 1.419ml Rice Krispies®
    Directions
    1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
    2. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated.

    3. Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Cool. Cut into 2-inch squares. Best if served the same day.


    MICROWAVE DIRECTIONS:
    In microwave-safe bowl heat butter and marshmallows on HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above. Microwave cooking times may vary.


    Note

    For best results, use fresh marshmallows.
    1 jar (7 oz.) marshmallow crème can be substituted for marshmallows.
    Diet, reduced calorie or tub margarine is not recommended.
    Store no more than two days at room temperature in airtight container. To freeze, place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks. Let stand at room temperature for 15 minutes before serving.
    Kellogg's has reduced the sodium content of Rice Krispies to meet current consumer flavor- and nutrition-preferences. Rice Krispies Treats made with the lower sodium cereal taste great without any added salt, but, if you desire, add 1/4 teaspoon salt to the butter before melting. Continue with recipe as directed.

    These are all brilliant - thank you ... and I've got all the ingredients.

    Just a wee tip for anyone wanting to make with the marshmallows, ASDA have the large packs of mini-marshmallows in the cooking section, 2 for £1 at the moment instead of a £1 each, and they have long use by dates.
