'Unlimited' Fibre Broadband? Beware of any?

We think we'd like to opt for fibre broadband when we move in (likely January) & i've been having a look about at some options & see the term "unlimited".
I'm wary of this as years ago, i forget the ISP but my package was 'unlimited'. What this meant was you can use quite an amount, but during these 'peak hours' we'll slow your speeds & if you start using what we see as being excessive amounts, we'll start capping you.
So of these 'unlimited' deals, are they truly unlimited, no hidden restrictions, or are some of them sneaky?
On the topic of fibre broadband, who's generally seen as #1 ISP? When i was looking into standard broadband, Sky got rave reviews, but this is a bit back now & anything can change in that timeframe.
We'll likely be getting Sky TV (having looked at & decided against other options). Virgin Media aren't available in my area.

This happens a lot less these days - probably due to the popularity of video streaming which has forced the ISPs to invest in higher capacities or lose customers in droves.
I have Plusnet fibre and see no evening slowdowns at all in the charts from my SamKnows box. At my distance from the cabinet I get 72Mbps and it pretty much does that all day every day apart from the odd glitch such as a week or so at 69.5 when I'm guessing it had resynced low for some reason.0
