AFAIK humidity physics is "harder" and more prone to variance. Need to consider temperature, the stack effect, the effect of wind on the property and of course where the holes are.
You're right about mineral wool, which is a reason not to use it in most cases (lofts being the obvious exception because it's cheap there).
