Most Gift Experience Voucher companies offer some degree of flexibility at a price, and indeed some companies offering these experiences have their own terms and conditions
I would not think that a cancellation penalty of 1/3rd seems unreasonable, particularly as if you cancel then the chances of them getting someone to replace your place are slim to none depending on the lateness of cancellation0 -

I plan on phoning them tomorrow to see whether they'll let me change the date, but just wanted some opinions as to where I stand legally?

There is no cancellation penalty; if you cancel, they just don't refund the cost paid (which I didn't pay anyway, as it was a gift to me, but I'd hate for it to be wasted).
The £50 is to change the date of the booking.
The experience is around six weeks' away.0
