And I think it's about time you gave us a definite date so that I can send my husband away for the day/night/weekend and watch you with your stripy top and beret getting all French (watch out that your string of onions doesn't dangle in the cooking pot, though)...

No, don't try to economise. It wouldn't be OK with just one bottle.
You see, we are cooking a la Francais. That means one bottle for the dish, and one bottle for the cook, n'est ce pas?0 -
I think you're best off following the recipe quite accurately the first time - you can always cut corners next time (!) if you want to economise.
I never bother using expensive wine in cooking - it always seems to taste good even with cheaper wine.
What's the date for the cookery extravaganza? - I'm poised here with my diary.
