Not a travel agent but search holidays for myself, friends and family. On holidayhypermarket.com there are 4* from £785 from London AI for the dates you quote.

Went to Cayo Coco about 5 years ago and its really picturesque but compared to the rest of the caribbean (we've been to Dominican Republic, Mexico, Jamaicia and Barbados as well) the standards are lower and the food pretty basic. That said we had a great holiday and I would go back.

I think you should read the first post on this thread for info of how to use it. Basically you need a quote FIRST for someone to beat.
