            Way back when grain was stored in sealed clay lined pits dug into the ground and the top germinated and created a carbon dioxide seal for the rest which kept it fresh so it could be ground when needed. Meat was salted/dried,smoked made into biltong/pemmican and stored for the winter. Apples and other fruit and mushrooms were dried along with peas and field beans, fish was salted and dried or air dried to make stockfish. Milk was made into butter and cheese because both will store and I should think there were many ways of preserving things that have been lost or would be unpalatable to our modern tastes. Beer/ale was made and cider and wine where the growing conditions were right and added to the nutrition. Honey keeps for years and would have been the sweetener used so there have always been foods that are processed in some way or other since we stopped being hunter gatherers.
 I don't mind using some convenience foods but much prefer if I can to cook from fresh ingredients. When you think of it even fresh meat from the butcher has been processed or any fruit/veg you buy in as it's been washed, trimmed, waxed etc. and life would be less pleasant without it too wouldn't it?0
