  • Some of these sound like just normal jacket spuds to me

My idea of potato skins, is exactly that, just the skins sliced into strips and baked until crispy with cheese/bacon or whatever melted over them :D

But then again, I've never eaten in Pizza Hut so have no idea what they class as potato skins :p

  • Theres some potato in it, like a bit scooped out and the filling put in. You can get them in icelands but I do object to paying out good money for a pretty potato skin, but I do love them!!!
  • can i post links on here? mod please remove if i can't

there's a brill site where a lot of the recipes are free and tells you how to make lots of 'brand name' recipes like Starbucks hot chocolate, McDonalds burger sauce etc.

They give you a free recipe every week.

Have tried a couple of things from this site, and the Starbucks hot choc tastes exactly the same - tons of sugar though  But still a lot cheaper than actually visiting the place (especially for 6 of us!) :D

I bake the potatoes in advance (while the oven is on for something else). Cut in half, scoop out some of the flesh, but leave a layer on the skin. You can use the removed potato for fishcakes or just as plain mash.
Put the hollowed out potato "shells" on a baking tray on a hot oven to crisp up for 15 mins(ish), then fill with crispy fried bacon pieces & cheese. I prefer mozzarella, but anything will be fine. Bake until cheese is melted. Mmmmm........I want some NOW!

I've just salvaged a bag of potatoes from under the kitchen sink  and they are now merrily cooking and will become various kinds of mash to stock up the freezer. Now I'm left with a pile of potato skins and wonder if anyone has a useful recipe to convert them into lovely edible skins? If and when I get them cooked could I then freeze the skins for later consumption or do I have to have a skin fest this weekend??

I have tried to search under 'potato' but got umpteen recipes for other stuff!
