Hiya,
When you've scooped out the middle fill - brush over backs with olive oil and bake until slighly crispy - fill with cooked bacon bits and chedder cheese and grill, serve with sour cream - yummy !!
You can try just about anything you fancy topped with a bit of cheese (any cheese..) and grilled.
Let your imagination go crazy !
Not sure on the freezing though - sure they would be fine...

I've just boiled them, mashed them all with butter and warm milk and then divided into three; one lot is mustard mash (added english mustard), one is garlic mash (added minced garlic) and the third is cheese and onion mash ( added grated cheese [old hard leftover bits] and finely chopped onion). When they have cooled I'll freeze them and see if it works. I reckon that they should freeze OK cos supermarkets sell it in ready meals which can be frozen.
Fingers crossed - and thanks for the tips about the skins. Think I'll do the oil and roasting thing and have them with garlic and lemon mayo tonight when Dr Who is on! Will probably stick some in the freezer to see what happens.

yes, OH did that one day and they were lovely. Except I think he deep fried them...can't remember what we were having that needed deep frying.DFW Nerd no 239.....Last Personal Debt paid off Nov 2012!

I put them all in a plastic bag, drizzled some olive oil on them, sprinkled them with smoked paprika and mild chilli flakes and shook them hard. Then spread them on a baking sheet and roasted them.

BTW I don't understand what is meant 'fill them'??? I just meant real potato peelings. Got nothing to fill.0
