Your basic options are to wait until such time as the courier collects , or refund and walk away from deal and take any resulting poor feedback.

You can't force collection although eBay might have been sympathetic if in the first instance you had tried a cancellation on the basis buyer was sending a courier which you do not allow- it is probably a bit late for that argument now as it seems like you have accepted a courier collection.
