Book flights on release?

I don't believe they necessarily drop, sometimes they do not release all the fare buckets at the same time (but sometimes they do)
If you use ITA Matrix you will be able to do searches for fares. If you untick the "Only show flights and prices with available seats" it should show you the lowest fares for each of the airlines even if they are sold out. Obviously you will only be able to check this year currently and there is nothing to say they will be the same next but it should give you an idea of what the lowest fares for your dates will sit around

That was really helpful, thanks. We can at least benchmark a price and buy as soon as they get near that price. The lowest fares for our dates were a bit cheaper than I anticipated, £1550 each with Emirates, so fingers crossed for Feb.
