Grate it and tray freeze then bag up - then just shake out when you need it! It's so useful!!!

It'll have been maturing for months, so isn't likely to go bad quicklyI'd keep it unopened in the fridge. When you open a block, you could feeze what you're not using, in smaller pieces.

I had no idea you could freeze cheese! One of my big wastes is buying the bags of grated mozzarella, using it in 1-2 meals then having to throw the rest out because it goes moudly. The idea that I could freeze half the bag is a revelation.0
