Hi, can anybody recommend a product. Also when taking pictures can I choose where these are stored - memory card or SIM. how do I make the choice.

I don't think that photos can be stored on the sim. It's memory capabilities are very limited and even contacts information gets cropped when you store them to a sim.
The default location is the SD card or the phone memory if there is no a card slot.0 -
Thanks, Do I take it the phone memory is not on the SIM. I put my contacts into the phone before the memory card was fitted so will these be transferred to the memory card or can I transfer them?

The phone memory is completely different to the SIM. The SIM can only store basic contact information, i.e. the contact name and 1 phone number. When you have a contact that has things like the email address and multiple phone numbers (mobile, work, home etc) they are stored on either the phone memory or external SD card (dependant on the setup of the phone).
The default storage location for things like pictures, music and videos etc is always the phone's built in memory. But most phones have the ability to change that with the addition of an SD card0 -

Each phone has a different way of doing it, have a look in the instructions. Failing that, try and find the menu option for storage0 -

Just use File Manager app to see that DCIM folder is located on the SD card.....
