Evening all, hoping someone can suggest a recipe as I have 3 peaches, a couple of apricots and 3 or 4 nectarines all about to go off so I need to use them up. I'm still not a fan of just eating them, so any recipe which could use them up would be appreciated! I did wonder about just sticking them all in a pot and making a weird sort of jam, but I don't want to waste them.

I have used peaches and nectarines together to make jam, and it was really nice, I am sure the apricots would go in fine as well, i find most similar fruits taste nice together,

Stick them in the oven and smother with brown sugar serve with a big dollop of craime fraiche
Sounds like a recipe for a fruit tart to me, I would take a large baked pastry case, line it with crème patissiere, then slice up the fruit and put on top, then glaze with a jelly. Or you could do a massive cheesecake and use them as part of the filling :D
Slice them into ramekins and sprinkle with crumble mix.. Individual fruit crumbles....serve with custard or ice cream:)

Thanks for the suggestions ladies, my only issue is that hubby won't eat dessert or pudding of any kind, and so anything I make will either have to be consumed by my good self (and I'm still unconvinced on non-banana fruit in general) or taken into work. Do you think I could do something using just a few of each fruit mixed together and it wouldn't be too weird?

My cat seems to be more or less over her shell shock now, but she's being watched like a hawk tonight and if there's any more out of character behaviour, she will be off to the vet in the morning. Hopefully it won't come to that :(
