    Unfortunately the 5 eggs doesn't allow for easy scaling down!!

    Recipe makes 6.

    That will divide into 1, 2, 3 or 6 people having one or more puddings each.

    For 4 or 5 people serve one pudding per person and hide the excess in the fridge for midnight snacks, breakfast or elevenses the following day. :rotfl:

    Yes, but if you're a couple that don't want to eat it every night for a week you can't make a half batch!

    (If you are going to put it in the fridge for another day, make sure it's in ramekins - the mixture sets.)

    We've also collected half a dozen of the ramekins when they were reduced and now use them to make our own desserts

    The basic recipe / technique is as follows;

    - mix 150g of crushed biscuits with 75g of melted butter and use to line the base of the ramekins

    - use half a pack of jelly cubes- dissolve in a little boiling water and then make up to 150ml with more water (and/or fruit juice if using tinned fruit)

    - allw the jelly to cool (but not set) and then whisk in 150ml of evaporated milk (e.g Carnation)

    - either place some chopped fruit on the biscuit base or fold it into the mix, and then pour onto the biscuit base.

    - leave in the fridge to set for a couple of hours

    You can vary the type of biscuit, flavour of jelly and type of fruit used. Our favourite combinations so far are;

    - ginger biscuits with mandarin jelly and chopped mandarin segments (use some of the juice when making the jelly)

    - digestive biscuits with lemon or lime jelly. Use the juice of a fresh lemon or lime to help make up the jelly, and grate the zest to add ot the mixture and sprinkle on top

    - shortbread biscuits with rasperry jelly - place fresh raspberries on the biscuit base and cover with the jelly mix.

    For the same reason Mulberry bags aren't "£2.99 for any bag" like the stall on the market..... better raw materials and lots of good marketing.

    I have bought them in the reduced and kept the glass ramekins. Great for using to put a few olives or nuts with a drink

    I am glad they are expensive, means I often see them in the YS section :D I still only buy them if they have been reduce twice :o

    I never keep the glass, next time I will so I can re-use for the recipes on here. anymore recipes for filling them with?
