    Last night i made this, which can be thrown together in minutes, was really tasty and will be using the leftovers for the next couple of days.

    Into a lasagna / casserole dish create layers of sliced -
    courgette
    tomato
    mushrooms
    peppers
    broccoli
    add some oregano, garlic & chili flakes
    and some chopped fresh chilli in between the layers
    cover in cheese sauce (just the bisto stuff), a couple of cubes of boursin, and some grated cheese

    whack it in the oven til browned - yum!

    can then be served with rice or in tortillas :)
