veggie meals that a meat eater will enjoy

Apparently if there's no meat it's not an enjoyable meal - so my DH believes. I can just get away with tomato pasta but he will go looking for any ham/sausage in the fridge to add to it!

Ideas very welcome

    Glad im not the only one with one of them at home! Damn annoying isn't it?


    Look forward to this thread but doubt if I will ever convert him to veggie once or twice a week! (that's all I'm asking)

    Me too! Mine is a proper veggiephobe :D

    He will eat mushroom risotto made with rehydrated porchini (sp?) mushrooms.

    I have recently converted him to liking Quorn mince and he has cottage pie with that quite happily now. I didn't even tell him last time and he never said a word :rotfl:

    My brother likes Linda McCartney mince (he says quorn mince is mushy). He will eat chilli non carne or a shepherdess pie using that with no complaints.


    I often make a veggie stirfry for us and he brings a piece of chicken breast which he fried and puts in at the end.

    This is good and actually tastes quite meaty in my (and other people I've made it for) opinion.

    I told Mr LW when I moved in with him, 12 years ago, that he was more than welcome to have meat, but he'd have to cook it for himself, with the kitchen door shut and the window open, as I can't cope with handling it, and the smell makes me heave. He opted to eat veggie at home, and just have steak if we go out for a celebration meal.

    He happily eats:
    • Veggie mince Shepherd Spy (I use soya mince in preference to Qu0rn)
    • Pizza topped with cheese, tomato, Qu0rn bacon-style slices and pineapple
    • Mushroom risotto
    • Veggie sausage toad-in-the-hole
    • Tagliatelle with tinned toms and veggie hot-dogs
    • Pasta fusilli with cheese sauce
    • Quorn fillets in white wine sauce
    • Egg fried rice
    • Veggie sausage'n'chips
    • Baked spud with cheese and beans
    • Potato & pasta soup (or indeed any HM soup made with veggie stock)
    • Salads based around egg, cheese, or veggie sausages cooked and cooled
    In fact I don't think there's been a single time in the 12 years we've been together when he's whinged about absence of meat.:A

    OH and I both eat meat but I was veggie and vegan for a long time, so the meals are still in my repertoire - we eat veggie/vegan about 5 days a week, and I'll still have veggie sausages/leave meat out whilst OH and DD eat meat.

    OHs favourites are mushroom risotto, mushroom bolognese (Abel and cole recipe), mushroom and ale pie with lots of puff pastry (maybe he just likes mushrooms...), chickpea burgers, falafels with hummus, cous cous and salad.

    Flavour is key I think, food that just happens to be vegetarian rather than is meatless.


    I cannot imagine how meat would improve dishes like Imam bayaldi, or ratatouille, many risotti or pasta dishes, macaroni cheese with meat happens, but IMO isn't nice.

    DH and I are committed carnivores, but also committed to high welfare standards and also not daily meat intake for health reasons. When I sit and think about vegetarian meals my mind often goes blank, but so much of what we cook so that when we have meat its beautiful meat that's had good husbandry, is meat free. Different vegetable tarts, last week we had a beautiful potato and herb terrine, beautiful with salad cold, and with hot vegetables when it was just out of the oven.

    One that OH loves, but he considers more of a lunch that an evening meal is a potato, asparagus and parmesan frittata. Boil the new potatoes and slice (or use left overs :) ) boil or steam some asparagus, chop into smaller pieces and finely grate some parmesan, one or tablespoons should do. Beat up four or six eggs, depending on your pan, throw everything in and finish the top under the grill.

    HTH, I can't remember whether I ever had a recipe for this, I think it just evolved, lol.

    ETA, I know you can't get vegetarian parmesan at the moment, but the OP isn't.
    Good enough is good enough, and I am more than good enough!:j

    Aubergine daube / stew - Claudia Roden's recipe is scrummy.
    Mushroom strongenough (as its called chez Floss!).
    Mushroom risotto.
    Tortilla with tomatoes/ asparagus/ cheese/ potatoes/ brocolli/ peppers/ chillies.
