    Aubergine Parmagiana, some crusty bread and a green salad and I'm in heaven. Aubergine has a meaty texture to it I find.

    My husband is a militant meat eater too, I end up having to cook some meat on the side just to appease.

    This lentil shepherd's pie is amazing - puy lentils are a great substitute for meat, as they still have a hearty filling sort of style.

    My college had a fantastic veggie restaurant that really opened my eyes.
    Vegetarian moussaka layered with broad beans, onions, peppers, lentils, tomato, sweet corn and potatoes.
    Baked tortilla wraps stuffed with onions,peppers,spiced rice, tomatoes, and cheese.
    Really thick (like a cake height) frittata of green beans, onions, peppers, potatoes and eggs.

    Something else I love from the travelling french market is tartiflette, and I make it at home - onions, mushrooms, peppers, sliced parboiled potatoes all simmered in stock and herbs, then add double cream and paprika. Yum!

    Can't beat a decent veggie lasagne, with some garlic bread!

    DS3 was veggie for a while so I'd make him bean burgers, falafels with extra grated carrot and courgette in.
    Butter bean, spring onion and cheese fritters (taste to me like the cheese and onion fryits you used to get from the chippie)
    melanzane alla parmigiana - layered aubergine with tomato sauce and cheese. Even DS2 who eats mostly meat, loves this
    and I'd do him a veggie version of my Jamaican rice, replacing the chicken and ham/sausage bit with butternut squash or sweet potato, courgettes, mushrooms etc.

    Lots of Indian cuisine is vegetarian.
    We all eat meat but I cook lots of veggie curries, daal, onion bajhis etc.
    Tasty, fairly cheap and meat free :)

    how adventurous generally is he with food? and does he like vegetables? because you'll have a lot more options if he likes to try new things, and if he is I'd steer away from anything that is a "meat substitute" at all: quorn/soy/etc, and plump for cuisines that centre dishes around the delights of veg/pulses etc. I am a meat eater and I find there is nothing more joyless than a quorn or soymince dish - e.g. a lasagne: meat and/or stuffed with tasty veg please, not soy mince.

    if he isn't adventurous/is very conservative with food you've more of a problem, but very simple "traditional" dishes like egg and chips (with a veg portion) could be a way forward.

    Or, and this would be my preferred option, he can cook his own food and you can cook yours - you can still eat together (like at a restaurant) and be a family, but prepare your own meals.....

    Thank you for all the ideas :) I'm going to give some a try and see what DH thinks.

    Veg lasagne and bean burgers to start with first

    When I posted my list earlier in the thread, I forgot an obvious dish - HM nut loaf (I adapted a Linda McCartney recipe) which I serve with either with roast root veggies, or with rice and HM sweet'n'sour sauce, with added pineapple chunks. That always goes down well, too.:o
