You could of course avoid the toll by taking the old road, which seems to be what the haulage companies are doing. Drogheda and Dundalk are still clogged with lorries. It is possible to drop off the motorway at the earlier junction and get back on. Possible but probably not worth it in a car.

Or simply bring a few euros in cash?

Sure. Anytime. The mr big of international toll dodging. Wanted in several jurisdictions.

It's not going to happen. Look at it this way if your conscience troubles you - the UK is a net contributor to the EU. That road was partially funded by the EU. It's your road, man - you paid for it.

Similarly, you won't be the subject of international arrest warrants for speeding in Spiddal, parking illicity in parknasilla, or careless driving in cahirsiveen. You wild desperado.

The ability to enforce driving penalties on those from the other side of the border (in either direction) was "coming in next year" for about five years, but I haven't heard it mentioned for at least four years now.

You must be one of the few from Northern Ireland who ever pay this.

There's another translation of Giro d'Italia.
