We send 50-60 items a month through Collect Plus via the economy service (3-5day), approx 10% arrive the next day. I imagine for the standard service this would be higher.

Ditto. I've had lots of feedback the very next day after sending an item by collect+ economy. I send about 15-20 parcels/month and have probably had this happen 3 or 4 times in the last couple of months alone.
So, in a nut shell, they don't offer a next day service, it's just a gamble that a few might get there quicker?
Yes it's a gamble when you send it but not when it arrives as it's fully tracked. As the OP says 'it was delivered next morning' I assume he established this from the tracking data.
