If they had no idea they were going to be starting a new job, they were unemployed at the time it wouldn't have covered them.
I would be telling them that I was unemployed at the time of taking it out personally.For them to ask the question, it must mean they'll try to catch me out.

I've never read in any part of my PPI conditions that the cover is not going to pay out immediately in the event of a claim, that I needed to have the cover in place for an amount of time before a payout would be authorised.

It is a normal requirement for the redundancy part of the cover for the person not to be in a probationary period, not to be aware of any potential redundancies or restructuring and there is often a period to qualify for redundancy cover (typically 3-6 months).
