I have just had a quick google at cheesecake recipies, and they all seem to use "full fat soft cheese", can i ask why is this?
what would be the outcome if i used a low fat soft cheese instead ?

Sorry can't help you with an answer.....but I noticed the same....I always end up getting full fat as I know most recipes say it but never know why we can't use the light option...

    Apparently you can
