Cakes for linchbox-reasonably healthy

Options
Looking for a reciipe for low-ish calorie cake or biscuits to go in lunchbox.Anyone suggest or point me in the direction of a thread?Thank you..er thats lunchbox,not linchbox..Even better if they could be frozen too.

    i recommend twinks hobnobs recipe http://forums.moneysavingexpert.com/showthread.html?t=471992, as biscuits go these are healthyish as the oats give you a slow release of energy and they really are delish and easy to make.
    proper prior planning prevents !!!!!! poor performance! :p

    Thanks-love to give them anything with oats in.Had been eyeing up the hobnob thread for a while-off to make them now,any other suggestions welcomed.
  • I have been making these banana loaves for my bunch. they've got fruit and no fat. and it tastes really yummy too.

    EDIT; I made some of Twinks hobnobs this morning- again very yummy and you get loads out of the mix.

    Muffins are good - they have far less fat and sugar compared to normal cake recipes, and fruit is quite often added - strawberry muffins are lush!

    Flapjacks are good, keep for ages in a tin (ha,ha) and there are loads of recipes for them on the threads - sorry can't do links.

    All great ideas so far.If anyone can find a recipe for low fat apple,bran,cinnamon muffins (just got a craving for them) can you point me in the direction of a link.All I am getting is American recipes or packet mixes.

    soak overnight
    1 cup sultanas, 1 cup all bran, 1 cup sugar, 1 cup milk
    then add 1 cup sr flour and 1 egg
    1lb tin, 1 hr, 160oc

    Are flapjacks good? I was looking for a recipe for some and all I found were ones that seemed to involve lots of butter AND marge?

    apple crumble cake.

    Make half quantity of sponge cake mixture (ie 1 egg, 2oz of SR flour, sugar and marge) and put in tray bake/swiss roll tin. it won't be very deep. cover with a thick layer of sliced apples and sprinkle a little bit of sugar over.

    Make up some crumble topping substituting porridge oats for some of the flour (best to give it a whizz in the food processor. stir in a small sprinkle of water - just enough to get it to form a few clumps while still being like biscuit crumbs. sprinkle over top of cake and bake at 180C/gas mark 5 for between 30-40 minutes. The exact time depends on the size of your cake tin and how deep the mixture is - best to test with a skewer.

    not quite as healthy as some of the other suggestions but a good way of getting extra fruit in picky eaters because you can make that layer quite thick

    Thanks for this - My Mum used to make this and I have looked everywhere for the recipe. I think Mum used to use cold tea to soak the all bran - has anyone heard of this variation?
