Problems with a non-EU Airline

Hi - I'm new to this forum but wondered if anyone can share some light on this issue.
I was on a flight from london to Melbourne (via Singapore) on Singapore airlines. We left only 55 minutes late but once in the air we experienced technical problems and were diverted to Dubai. We spent around 3 hours on the tarmac before confirmation was given that the fault had been fixed. However the crew couldn't travel all the way to Singapore as they would exceed the legal limit so we then were diverted to Bankok. We finally arrived in Singapore after around 23 hours on the plane! Onward connections to Melbourne had been missed and I finally landed in Australia over 12 hours late. I have requested compensation as the plane left from an EU airport and I thought it was about a delayed landing in the final destination not the departure delay. Singapore Airlines is claiming the delay (ie technical fault) started outside of EU airsapace and they are not an EU- carrier so are not liable. To me where the delay happened is not relevant if the plan left an EU airport and the delay to my final destination was over three hours. Can anyone shed light on who is right here and whether I should go back to the airline with an appeal?
