  • I thought pancake day was a week Tuesday?
We spend money we don't have, on things that we don't need, to impress people we don't like. I don't and I'm happy!

I only cook Monday to Friday (OH does Saturday and Sunday, he enjoys cooking, I don't but as we both work full time and I work from home, it only seems fair that I do the majority).

Mon- minted lamb chops, veg and boiled tatties.
Tues, paprika chicken, chips and veg
Wed - bacon, mushroom and potatoes (it's a one pot dish by Nigel Slater, but I can't find the recipe online, it's in Real fast food)
Thurs - sausage plait and beans
Fri - chicken teriyaki, rice and mangetout
Good enough is good enough, and I am more than good enough!:j

If all else fails, remember, keep calm and hug a spaniel!

Some of these are meals we've already had! The level of detail varies, but the protein sources are pre-planned.

Saturday: butter chicken (using spice mix), spiced courgette (from garden) & cauliflower, basmati rice & leftover naan [leftovers used Sunday lunch]
Sunday: hm yorkies with sliced roast beef (I bought it cooked but in the piece) & gravy, veggies from freezer
Monday: hotpot made with the rest of the beef, carrots & green beans
Tuesday: macaroni cheese with ham & tomatoes [ham leftover from christmas!]
Wednesday: pasties (using bread not pastry) filled with sausage, baked beans & cheese
Thursday: something with either fish (barramundi) or minced pork
Friday: fish pie using smoked trout, rice, egg & cabbage with soured cream

The beef sounds extravagent but it wasn't - I paid $10 for a 500g piece, and we'll get two meals out of it. It's still hot here, and so there are days when I don't want to have the oven on more than necessary.

My second week posting. Week 1 went well, only deviated once as forgot DH and I had a cinema trip planned on Wednesday.

Mon - Miso salmon (this is what got bumped last week due to cinema trip so salmon was still in freezer, now marinating in the fridge).
Tues - Venison meatballs (DH brought them home as he spotted them in Aldi and fancied trying them) with HM tomato sauce (from freezer) and pasta.
Weds - Quorn keema and peas (from freezer, made double a few weeks ago), naan.
Thurs - Chicken risotto (with LO chicken from yesterday's roast, and stock I made from boiling up the carcass - felt very domesticated!)
    Fri - HM pizza
Sat - Haddock & broccoli gratin (fish in freezer), new pots
Sun - Friends coming round, will make slow cooked beef in red wine on Fri or Sat, and serve with mash and green veg. Lemon self saucing pud for pudding.

I'm going off plan slightly, I have some natural yoghurt to use up so the BBQ chicken will now be chicken tikka.

Have finally sorted out my menu plan for this week. My week started on Sunday:

Sun - Roast duck leg, roast potatoes, roasted veg & brocolli.
Mon - Pea, prawn & mint risotto
Tues - Pork curry using up leftovers from Saturday (we went out for a meal and had pork hock and they were huge so we asked for a doggy bag! There was about 500g of pork left on the 2 hocks and we both ate a huge amount on Sat) served with rice
Wed - Beef bourgignon (currently cooking in SC), new pots & green veg of some sort probably brocolli
Thurs - LO pork curry & rice; may make some onion or mushroom bharjis to go with it
Fri - LO beef bourgignon, mash & veg
Sat - HM fish & chips with peas. May also make some tartare sauce

    Denise
