Mealplan WB 24th February 2014

Options
DH is going away tomorrow morning for 4 weeks, so things are going to get very repetitive for a while as meals stretch that little bit further (less cooking for me), and tonight we are having a 'Takeaway' from Iceland's (which is our favourite and only £7.50) :)

Due to health issues my meals need to be Low GI and have been for 3 years, but I've been a little lax of late since DD2 was born, and we've started eating foods I've avoided for a long time.

So to adjust back again I need to avoid Potatoes and high GI Root Vegetables, so instead of traditional Vegetables my Casserole was made with Carrot, Leeks, Onions and Butternut Squash, which was really nice, and the best Casserole I've ever made. This week I will be trying Carrot and Butternut Squash Mash for the first time too :)

So the meal plan is:

Saturday - Iceland's 'Takeaway' Chinese/Indian
Sunday - LO Chicken Casserole and Dumplings
Monday - SC Whole Chicken (NEW!) Granary Yorkshire Pudding & Vegetables
Tuesday - Toad in the Hole with Vegetables
Wednesday - Chicken Jambalaya
Thursday - Cottage Pie with Carrot & Butternut Squash Mash
Friday - LO Chicken Casserole and Dumplings
Saturday - LO Lasagne and Salad
Sunday - LO Chicken Casserole and Dumplings

Today I need to make Pea and Ham Soup in the Pressure Cooker for Lunch and the rest will go in the freezer for lunches over the next few weeks for myself.

DD1 will get a variety of lunches, depending on what I have in the freezer and if I can cook on the day:

Mini Wholewheat Pizza
Mini Omelettes with HM Wholewheat Bread
Mini Wholewheat Toad in the Hole with Vegetables
Scrambles OR Hardboiled Eggs with HM Wholewheat Toast
Cheesy OR Pesto Pasta and Vegetables
Pea Soup with HM Wholewheat Bread
Crackers, Cheese, Cherry Tomatoes & Gherkins

DS will get a mix of school dinners and Pasta Salads for lunch.

Breakfast is a mix of HM Wholewheat (HM Granary for me) Toast with a variety of toppings and Cereal for the children.

  • Hello, everyone - it's been a while since I've posted here so I hope you don't mind my slipping back in. We've moved house and are still in a bit of upheaval, but it's really time to get back to meal planning with a vengeance! So, here's what we'll be eating this week chez Kitchenbunny:

    Saturday - Lasagne & Moussaka Portions from freezer with a garlic bread
    Sunday - Ribs & Chips, possibly with sweetcorn cakes
    Monday - Spicy Sausage Pasta
    Tuesday - Reggae Reggae Chicken Wraps (I have a teeny amount of sauce left in the bottom of the bottle from aaaaages ago and will use it to marinade the chicken in)
    Wednesday - Fish & Chips
    Thursday - Sweet & Sour Pork with Noodles
    Friday - Uncertain as yet - could be a pizza
    Saturday - Chicken Curry with Rice
    Sunday - Cottage Pie with Veggies

    I'm going to make an apple crumble today and try to portion it up for puddings throughout the week. Our market had a really decent offer on cooking apples so I got three large sized ones really cheaply. I'll also cook to fill the biscuit and cake tins as we're getting a bit low, and the oven will be on on a couple of occasions so it makes sense to use all the hot space!

    DH has a week off work this week (yay!) so the plan may end up changing depending on what we get up to :) The proposed plan is this:

    S - Turkey fried rice with curry sauce and steamed dumplings
    S - Roast lamb with broccoli, carrots, cabbage, new potatoes and gravy
    M - (out at a gig) Burritos with refried beans, corn and salad for DH, chicken sandwiches for me
    T - Fajitas
    W - Burittos with refried beans, corn and salad (again!)
    T - Turkey and mushroom stroganoff with spaghetti (now changed to lasagne, I ate the turkey!)
    F - Gammon and mushroom risotto

    I know it's a bit repetetive, but DH has requested burritos will quite happily eat the same thing every day! At least it's easy for me - I'll just make up a big batch of mexican style mince and veg, then assemble as needed.

    Breakfasts will be toast or cereal, lunches will be sandwiches, beans on toast or soup.

    Saturday: homemade pizza
    Sunday: homemade lanm and feta burgers
    Monday: Sicilian sardine linguine
    Tuesday: Pork chops, veg and potatoes
    Wednesday: Carrot and feta fritters in pitta bread
    Thursday: Beans and cheese on toast

    Lunches will be a variety of sandwiches and paninis.

    really boring this week as trying to use up the freezer. Also only up till Thursday as I'm going home Thurs evening to Sun.

    Sunday - pizza
    Monday - Tuna pasta sauce
    Tuesday - Chicken baked potato and beans
    Wednesday - Chicken wedges and peas.

    Lunches are: Baked potatoes, LO pizza and sandwiches.

    Again I'm not saying which days as I don't have my shifts yet.
    Chicken dinner
    Chilli and baked potatoes, chilli from the freezer
    Turkey curry with turmeric rice, the last of it :cool: I wonder if we'll miss it next week? :rotfl:

    Home made pizza with garlic bread

    Stew and dumplings from freezer
    BBQ chicken drumsticks with noodles
    Sausage, chips and beans
    I have an even smaller budget this month so we need to have a few cheap nights like, jacket spuds and chips:(

    Lunches will be leftovers and soups and quiche 1 day, I'll make that and the soup tomorrow. I have 2 chicken carcasses in the freezer so it will be chicken and veg soup.

    Julie it is a shame that you can't have high GI veg as BNS, carrot and swede mash is our favourite. We call it 3 veg mash. I make it by the tonne and then freeze it in small amounts to pull out any time I want something quick :)

  • Soworried - do you freeze it cooked and mashed, or do you peel and chop the veg and freeze that to cook and mash later? I think I've got enough for 2 or 3 portions of mash and was going to do the second.

    I freeze it mashed and freeze in food bags in small portions. The reason I do it in food bags is that I defrost it in a bowl with a hole in the bag. Mash creates water when frozen and it can then drain away and it is just as nice as when first mashed :A
    I'm making a big batch of this tomorrow as I got a huge BNS ys at 34p today :T

    I forgot about pancake day on Tuesday :eek: We'll probably just have soup and rolls followed by a few pancakes with lemon and sugar or jam.
